Recipe courtesy Alton Brown. Makes 1 1/2 quarts. If it's held frozen more than 2 hours, move it to the refrigerator about half an hour before serving. Double the zest for a more assertive sorbet.
Ingredients
- 1 cup Sugar
- 1 cup Key lime preserves
- 1 Lemon, zested and juiced
- 1 Lime, zested and juiced
- 4 cup Club soda, lime flavored, or seltzer
- Kosher salt
Directions
- Stir the sugar, preserves and 1 cup of the soda in a medium saucepan over low heat until melted. Add the citrus juice and zest.
- Stir in the remaining soda, move to a lidded container and chill thoroughly, 2 to 3 hours.
- Churn in an ice cream maker until it reaches the consistency of firm slush. Return to the container and harden in the freezer 1 hour before serving.
