Recipe courtesy Robin Miller, 2007.

Ingredients

  • Cooking spray
  • 16 oz Blueberry, 1 bag (2 cups) frozen, kept frozen until used, plus more for garnish
  • 1 1/2 cup Sugar, divided
  • 1 cup Flour, all-purpose
  • 1 tsp Baking powder
  • 1/2 cup Butter, 1 stick, unsalted, melted
  • 3/4 cup Milk, regular, lowfat or skim
  • Ice cream, optional

Directions

  1. Preheat the oven to 350 degrees F and spray a 9 by 12-inch pan.
  2. Toss the blueberries with 1/2 cup of the sugar. Combine the remaining sugar, flour and baking powder.
  3. Beat the butter and milk until smooth, then gradually beat in the flour mixture.
  4. Pour the batter into the pan and scatter the blueberries over it, letting them sink in without mixing.
  5. Bake until golden, 35 to 45 minutes. Cool slightly and serve with ice cream and/or blueberries.
