Recipe courtesy Anne Burrell. The beans should be very tender, almost falling apart, and VERY flavorful.
Ingredients
- Olive oil, extra-virgin
- 1/2 lb Bacon, slab, skin removed, cut into lardons
- 2 clove Garlic, smashed
- 1 pinch Red pepper flakes, crushed
- 1/2 lb Mushroom, button, stemmed and sliced
- Kosher salt
- 1 lb Green bean, string beans, stems removed
- 1 cup Chicken stock
Directions
- Lightly coat a large straight-sided skillet with olive oil, add the bacon, garlic and red pepper and bring to medium heat. Cook until the bacon is brown and crispy and has given off most of its fat. When the garlic is golden and very aromatic, discard it.
- Add the mushrooms, season with salt and cook until soft, 2 to 3 minutes.
- Add the beans and stock, season, cover and cook over medium-low 40 to 45 minutes, adding water if the liquid reduces too much.
- Uncover and cook until almost all the liquid has reduced.
