Recipe courtesy Alton Brown, 2006. Makes 8 to 10 slices. Baked in a Dutch oven on a gas grill.
Ingredients
- 10 oz Barley flour, about 3 cups
- 1 tsp Kosher salt
- 1 oz Baking powder, about 2 1/2 tablespoons
- 2 tbsp Honey
- 1/4 cup Canola oil, plus extra for the pan
- 2 Egg
- 1 cup Milk, whole
Directions
- Preheat a gas grill on low for at least 10 minutes. Lightly oil the sides and bottom of a 4 to 5-quart Dutch oven.
- Whisk together the flour, salt and baking powder. In another bowl whisk the honey, oil, eggs and milk, then stir into the dry ingredients until combined.
- Pour into the Dutch oven and set it, uncovered, on the grill. Close the grill lid and cook 35 to 40 minutes, until the bread reaches 190 degrees F inside.
- Cool in the pot at least 5 minutes, then turn out onto a rack.
To bake in a regular oven, bake at 350 degrees F for 25 to 30 minutes, to an internal temperature of 190 degrees F.
