Recipe courtesy Giada De Laurentiis.
Ingredients
- 4 tsp Olive oil, divided
- 1 Onion, medium, coarsely chopped
- 1 lb Ground beef
- Salt
- Black pepper, freshly ground
- 14 Manicotti, 8-ounce package
- 15 oz Ricotta, whole milk
- 3 cup Mozzarella, shredded, divided
- 1 cup Parmesan, grated, divided
- 2 tbsp Parsley, fresh Italian, chopped
- 2 clove Garlic, minced
- 3 cup Marinara sauce
- 2 tbsp Butter, cut into pieces
Directions
- Heat 1 teaspoon oil in a heavy medium skillet over medium heat. Saute the onion and beef, seasoned, until browned and translucent, about 5 minutes. Cool.
- Brush a large baking sheet with 1 teaspoon oil. Cook the manicotti in salted boiling water until slightly softened but still very firm, 4 to 6 minutes. Lift onto the baking sheet and cool.
- Mix the ricotta, 1 1/2 to 2 cups mozzarella, 1/2 cup Parmesan, parsley and garlic and season. Stir in the cooled meat.
- Preheat the oven to 350 degrees F. Brush a 13 by 9 by 2-inch glass baking dish with the remaining oil and spoon in 1 1/2 cups sauce.
- Fill the manicotti, arrange in a single layer and spoon the rest of the sauce over. Sprinkle with the remaining mozzarella and Parmesan and dot with butter.
- Bake uncovered until heated through and bubbling at the sides, 30 to 35 minutes. Let stand 5 minutes.
