Ingredients

Directions

  1. Heat 1 teaspoon oil in a heavy medium skillet over medium heat. Saute the onion and beef, seasoned, until browned and translucent, about 5 minutes. Cool.
  2. Brush a large baking sheet with 1 teaspoon oil. Cook the manicotti in salted boiling water until slightly softened but still very firm, 4 to 6 minutes. Lift onto the baking sheet and cool.
  3. Mix the ricotta, 1 1/2 to 2 cups mozzarella, 1/2 cup Parmesan, parsley and garlic and season. Stir in the cooled meat.
  4. Preheat the oven to 350 degrees F. Brush a 13 by 9 by 2-inch glass baking dish with the remaining oil and spoon in 1 1/2 cups sauce.
  5. Fill the manicotti, arrange in a single layer and spoon the rest of the sauce over. Sprinkle with the remaining mozzarella and Parmesan and dot with butter.
  6. Bake uncovered until heated through and bubbling at the sides, 30 to 35 minutes. Let stand 5 minutes.
