Bob's Beef Barley Mushroom Vegetable Soup

"Started making beef veg soup the other day and for once wrote down stuff as I went along." The dried mushrooms make a big difference over boxed button or portobello. Dried shiitake can be chewy - discard the stems and slice the caps thinly. Better the next day, but the barley keeps absorbing liquid, so add water or beef broth when reheating.

The directions also use flour, Worcestershire and thyme, which aren't in the ingredient list.

Serve with grilled ham and cheese with a pickle, or Cuban Garlic Bread (its own recipe).

Ingredients

Directions

  1. Heat the olive oil in a stockpot and brown the ribs; remove. Dice the stew meat into small bite-size pieces, brown and remove.
  2. Sweat the onion, then add the celery and garlic to soften without browning. Stir in flour to make a roux and cook a minute or so.
  3. Add the wine, broth, tomatoes, water, bay leaves, Worcestershire, thyme and beef base and simmer over medium-low about 30 minutes.
  4. Add the mushrooms and their soaking liquid, basil, cayenne, black-eyed peas, lima beans, ketchup, pepper and barley. Simmer about 1 hour.
  5. Add the mixed vegetables, okra, parsley and potato and simmer until done. Adjust the seasoning.
