Bob's Catfish and Kale Soup
Bob's idea, no amounts - "basically make a version of Kale Soup, then poach seasoned fillets on top at the end."
Ingredients
- Kale, chopped
- Catfish, fillets
- Garlic
- Beans
- Chicken broth
- Diced tomatoes, or stewed
- Old Bay seasoning, or Cajun seasoning
- Andouille sausage, or chorizo, optional
- Red pepper flakes
- Potato, diced
- Salt
- Black pepper
- Bay leaf
Directions
- Make a version of Kale Soup with the kale, garlic, beans, broth, tomatoes, sausage if using, red pepper, potato, bay leaf and seasoning.
- Season the catfish fillets and poach them on top of the soup at the end.
