Bourbon BBQ Sauce

Ingredients

• 2 tbsp Butter, unsalted
• 1 tbsp Olive oil
• 1 Onion, large Spanish, coarsely chopped
• 3 clove Garlic, coarsely chopped
• 2 cup Bourbon whiskey, plus 2 tablespoons
• 3 cup Plum tomatoes, canned, with their juices, pureed
• 2 cup Water
• 1/4 cup Ketchup
• 1/4 cup Red wine vinegar
• 2 tbsp Worcestershire sauce
• 2 tbsp Dark brown sugar
• 2 tbsp Honey
• 1/4 cup Molasses
• 2 tbsp Dijon mustard
• 3 tbsp Ancho chili powder
• 1 tbsp Chipotle, pepper puree
