Braised Leeks

Vegetables
Ingredients
- 4 Leek, large, outer leaves discarded, trimmed to about 7 inches
- 3 tbsp Butter
- 1/2 cup Chicken stock
- 2 tsp Thyme, leaves, chopped
- 1/4 tsp Salt
- 1 pinch Black pepper
Directions
- Trim most of the roots, leaving enough to hold each leek together. Cut lengthwise into halves or quarters and rinse under cold water, loosening any dirt between the leaves.
- Melt the butter in a heavy lidded skillet over medium heat. Add the leeks with the water clinging to them and cook 5 minutes, stirring occasionally.
- Add the stock and thyme, lower to medium-low, cover and braise about 10 minutes, until very tender. Season with salt and pepper.
