Braised Leeks

Ingredients

  • 4 Leek, large, outer leaves discarded, trimmed to about 7 inches
  • 3 tbsp Butter
  • 1/2 cup Chicken stock
  • 2 tsp Thyme, leaves, chopped
  • 1/4 tsp Salt
  • 1 pinch Black pepper

Directions

  1. Trim most of the roots, leaving enough to hold each leek together. Cut lengthwise into halves or quarters and rinse under cold water, loosening any dirt between the leaves.
  2. Melt the butter in a heavy lidded skillet over medium heat. Add the leeks with the water clinging to them and cook 5 minutes, stirring occasionally.
  3. Add the stock and thyme, lower to medium-low, cover and braise about 10 minutes, until very tender. Season with salt and pepper.
