Ghee is butter melted slowly until the milk solids separate and brown, giving a nutty, caramel flavor and a higher smoke point than butter. Garam masala is a blend of ground Indian spices ("garam" means warm or hot).
Ingredients
- 3 lb Cauliflower, 2 small heads (3 to 3 1/2 pounds), cored, medium florets
- 6 tbsp Ghee, or clarified butter, melted
- 2 tsp Kosher salt
- 2 tsp Curry powder
- 1/2 tsp Cayenne pepper
- 1/4 tsp Garam masala
Directions
- Preheat the oven to 400 degrees F.
- Stir the ghee, salt, curry powder, cayenne and garam masala together, pour over the cauliflower in a large bowl and toss until thoroughly coated.
- Roast on a large baking sheet until caramelized at the edges and crisp-tender, 18 to 20 minutes, stirring once. Serve hot.
