Ingredients

  • 2 tbsp Butter
  • 2 slice Bacon, thick-cut, chopped
  • 1 Onion, medium, chopped
  • 2 rib Celery, with greens, chopped
  • 4 sprig Thyme, fresh
  • Salt
  • Black pepper
  • 2 tsp Hot sauce
  • 2 tbsp Flour, all-purpose
  • 1 pt Half-and-half
  • 2 cup Chicken stock
  • 1 cup Potato, hash-brown-style raw shredded potatoes, from the dairy aisle
  • 2 can Clam, whole baby clams with their juice

Directions

  1. Melt the butter in a medium pot over medium-high heat. Add the bacon, onion, celery and thyme, season with salt, pepper and hot sauce and cook 5 minutes. Add the flour and cook a minute more.
  2. Add the half-and-half and stock, bring to a bubble and stir in the potatoes. Return to a boil, then simmer 15 minutes, until the potatoes are cooked and the soup coats a spoon.
  3. Add the clams. Remove the thyme stems (the leaves will have fallen off), stir and adjust the seasoning.
