Recipe courtesy Paula Deen. Uses Paula Deen's House Seasoning (its own recipe).
Ingredients
- 3 lb Green bean, fresh
- 1/4 lb Salt pork, sliced
- 1/4 cup Bacon fat
- 2 cup Chicken broth, plus more if needed
- 3 tsp House seasoning, 2 to 3 teaspoons
- 12 Red potatoes, small new potatoes
- 1 Onion, cut into slivers
- 4 tbsp Unsalted butter, 1/2 stick, sliced
- Black pepper, ground
Directions
- Remove the ends from the beans, snap them in 2, wash and drain.
- Meanwhile, lightly brown the salt pork in the bacon grease in a large cast-iron Dutch oven over medium heat, turning often, about 10 minutes.
- Stir in the beans to coat with the fat. Add the broth and House Seasoning and cook, tightly covered, over medium-low about 30 minutes, until half done.
- Meanwhile, peel a strip around the middle of each potato. Add the potatoes and onion, with 1/4 cup more broth if needed, and cook covered until the potatoes are tender, 25 to 30 minutes, keeping a little liquid in the pot.
- Tilt the lid to the side and cook until the beans are wilted, about 15 minutes, adding the butter and seasoning with pepper.
