Manny's Manly Meat Sauce
"No nonsense: meat, mushroom, and macaroni." Allspice is the secret ingredient. Serve with grated Parmesan or Romano and warm crusty bread.
Ingredients
- 1 tbsp Olive oil, extra-virgin
- 1/2 tsp Red pepper flakes, crushed
- 1 lb Ground sirloin, 90 percent lean
- 1 Onion, small, chopped
- 4 clove Garlic, crushed
- 1/2 tsp Allspice
- Salt, coarse
- Black pepper
- 1 Portobello mushrooms, medium cap, finely chopped
- 1/2 cup Red wine
- 3/4 cup Beef broth, or stock
- 1 can Crushed tomato, 28 to 32 ounces
- 1 handful Parsley, flat-leaf, chopped
- 1 lb Rigatoni, cooked al dente
- Parmesan, or Romano, grated, for garnish
Directions
- Heat a deep skillet over medium-high heat with the olive oil. Add the pepper flakes and infuse 10 seconds.
- Add the beef, onions, garlic and seasonings and brown 5 minutes. Add the mushrooms and cook 5 minutes more.
- Add the wine and reduce 1 minute. Add the broth and tomatoes, lower the heat and simmer 5 to 10 minutes (the parsley goes in here).
- Toss the pasta with half the sauce and serve the rest on top.
