Ingredients
- 3 lb Chicken wings
- Salt
- Black pepper, freshly ground
- 2 tbsp Coriander seeds, toasted and crushed, divided
- 2 tbsp Cumin seeds, toasted and crushed, divided
- 1 Orange, juiced
- 1/4 cup Sherry vinegar
- 1 Jalapeno, sliced
- 1 tbsp Butter
- Vegetable oil, for frying
Directions
- Season the wings with salt, pepper, and half the coriander and cumin.
- Preheat the oven to 350 degrees F. Spread the wings on a baking tray and bake 15 to 20 minutes, until just about cooked through. Let cool slightly.
- In a saucepot over medium-high heat, combine the orange juice, sherry vinegar, jalapeno, and the rest of the coriander and cumin. Reduce by half, about 10 minutes. Off the heat, stir in the butter.
- Heat the oil to 360 degrees F and deep-fry the wings until golden and crispy. Drain on paper towels and season with salt.
- Pour the sauce over the wings in a bowl and toss to coat evenly.
