Topped with pulled pork with C-Town BBQ sauce (from Michael Symon's Pulled Pork BBQ) and cole slaw.
Ingredients
- 8 oz Ground sirloin
- 8 oz Ground short rib
- 8 oz Beef brisket, ground
- 3 oz Bacon, ground
- Kosher salt
- Black pepper, cracked
- 4 Brioche bun
- Mayonnaise
- Olive oil
- 1 head Savoy cabbage, shredded, for the slaw
- 3 Carrot, shredded, for the slaw
- 5 Green onion, thinly sliced, for the slaw
- 1 cup Cilantro, chopped, for the slaw
- 1 cup Parsley, chopped, for the slaw
- 1/3 cup Pickle juice, for the slaw
- 1/2 cup Mayonnaise, for the slaw
- 1 tbsp Salt, for the slaw
Directions
- For the coleslaw: in a mixing bowl add the chopped herbs to the shredded cabbage. Add the remaining slaw ingredients and toss to combine. Add more salt if necessary.
- For the burger: build a medium-hot fire in your grill or preheat a stovetop grill pan.
- Combine all the meats and form into 4 patties (about 3 1/2 inches in diameter). Season with salt and cracked black pepper. Make a thumbprint in the middle of each burger to keep it from shrinking while cooking.
- Brush the patties with a little olive oil. Grill for 3 minutes, flip and grill for 3 minutes for medium-rare.
- Spread a little mayonnaise on each bun and toast lightly on the grill. Build the burgers in the buns with a spoonful of slaw and pulled pork BBQ.
