From Food Network Kitchens. For a smoother soup, puree all the beans.

Ingredients

Directions

  1. Cover the beans with cold water by about 2 inches in a large saucepan, bring to a boil and simmer 5 minutes. Cover off the heat and let sit 1 hour. Drain. Tie the parsley, thyme and bay leaf with twine.
  2. Combine the beans, herb bundle, hocks, onion, garlic and water (the carrot goes in here too) in a large soup pot. Bring to a boil, cover and simmer gently until the beans and hocks are completely tender, about 1 1/2 hours.
  3. Remove the hocks and cool slightly. Cube the meat, discarding bones, fat and skin. Discard the herb bundle.
  4. Puree about 3 cups of the beans with some liquid and stir back in with the meat. Heat through and season.
  5. Serve in heated bowls with a small pat of butter on top.
