Servings: 4
Ingredients
- 2 Ham steak, 1/2 inch thick
- 4 tbsp Butter, divided
- 3 can Pineapple, 8-ounce cans of chunks, liquid reserved
- 1/4 cup Orange juice
- 1 tbsp Dijon mustard
- 1 tbsp Whole grain mustard
- Salt
- Black pepper, freshly ground
Directions
- Remove the rind from the ham and trim all but 1/4 inch of the outer fat. Cut into 4 serving pieces.
- In a large saute pan over moderately high heat, melt 2 tablespoons butter. Saute the ham 3 minutes per side, until lightly browned. Transfer to a plate.
- Blot the pineapple as dry as possible. Add the remaining 2 tablespoons butter and saute the pineapple until the edges caramelize, 4 to 5 minutes. Remove and reserve.
- Add the orange and reserved pineapple juices to the pan and reduce by half, 5 to 6 minutes. Whisk in both mustards. Return the ham and pineapple, toss and heat through. Season to taste.
