• 1 can Peeled tomatoes, 28-ounce whole, drained, juice reserved; recommended San Marzano
• 1 Red onion, small, roughly chopped
• 1 Serrano pepper
• 1 clove Garlic, roughly chopped
• 2 Lime, juiced
• 1/2 cup Cilantro, leaves, chopped
• Kosher salt
• Black pepper, freshly cracked
• Olive oil, extra-virgin, for drizzling
